Chewy Chocolate Chunk Cookies

Last week, one of the reader ask me about the cookie with load of chocolate chunks, and I told her that I will post the recipe for her.



Luckily that I have to make a lot of cookies for giving as a gift lately, so I had a chance to make this cookies. 
You can see from the ingredient list that the amount of the chocolate is not fixed, actually it depends on the degree of your addition to the chocolate, haha. Well, as you know that my sister is not dark chocolate's fan, (and she is my taster), so I didn't use much of it, but you can go wild, ^^ if you want.
I use 55% dark chocolate for this recipe, but you can use any kinds of chocolate, milk, dark or any percentage, it's your cookie, play and be happy with it. 

Note: The chocolate in the cookie will be soft (meltable stage) in 1-2 days after that it will drier.

Chewy Chocolate Chunk Cookies
Makes 15-17


300g ............................ All purpose flour
1/2 tsp .......................... Baking soda
1/2 tsp .......................... Salt
170g ............................... Unsalted butter, melted and cooled until slightly warm
170g ............................... Brown sugar
80g ................................. Granulated sugar
1 ..................................... Egg
1 ..................................... Egg yolk
1tsp ............................... Vanilla extract
170-250g ...................... Dark chocolate chunks


Whisk together the melted butter, two kinds of sugar, salt and vanilla until fully combine.


 Stir in the egg and egg yolk.


 Sift the flour with baking soda into the bowl.


 Fold to combine.
 Refrigerate for 1 hour (or until firm)


Preheat the oven to 180°C
Line the sheet pans with baking paper. 

 Scoop the cookie dough, and roll into a ball.


You can use 170-250g of dark chocolate ^^.


Put chocolate chunks into the dough.


 Roll to cover chocolate chunks.


 Place on a baking sheet, flatten them lightly, and press more chocolate chunks on the cookie.



Bake for 15-18 minutes or until the edge start to harden and the center is puff.
Let it cool completely on the baking sheet.
